
- Orzo pasta
- Feta
- Butternut Squash
- Onion
- Garlic (3 cloves)
- Sage leaves
- Chilli Flakes (optional)
Method:
Chop the butternut squash into large chunks and roast in the oven with lots of olive oil and flaked salt.
In a pan, finely chop the onion and fry in a pan with generous amount of olive oil and a pinch of salt. Slice the garlic cloves and add to the pan.
Once the onion is soft add the orzo into the pan and stir so it absorbs all the the juices. Add some water so it covers the pasta and onions.
Add sage leaves and if adding chilli add this now too! Continuously stir and adding warm water if needed until the pasta is al dante.
Serve in a bowl with the butternut squash, feta crumbled on the top, a healthy glug of good quality olive oil and some pepper!
